Fast and Easy Carrot Cake
Submitted by blondieGeat Carrot Cake recipe! It is simple and relatively easy to make… Just for those starving afternoons where you would like to get the necessary carbs to keep up with the work day. Delicious without being too sweet.
Serves: 6
Ingredients:
- 2 cups sugar
- 2 cups flour
- 2 teaspoons soda
- 1 cup oil
- 4 eggs
- 3 cups grated carrots
- 2 teaspoons cinnamon
- 1 teaspoon salt
- 1/2 cup nuts
Preparation:
- Add oil to the dry ingredients and mix well.
- Then, add the eggs, one at a time.
- Finally, complete adding the carrots and the nuts.
- Pour into 2 9″ pans and bake at 350 degrees F. for 35 minutes.
Icing for Carrot Cake
Ingredients:
- 1/2 stick butter or margarine
- 1 8 ounce package cream cheese (room temperature)
- 2 teaspoons vanilla
- 1 pound powered sugar
Preparation:
- Combine all the ingredients in a bowl.
- Mix and spread on top of the cake.
