Bananas Foster

Ingredients
  • 1/4 Cup unsalted butter (1/2 stick)
  • 1/4 Cup firmly packed brown sugar
  • 1 Teaspoon cinnamon
  • 1/2 Cups dark rum
  • 1/2 Cup Creme De Banana Liquor
  • 6 ripe bananas (peeled and quartered)
  • Vanilla Ice Cream
Directions
  1. Stir butter with sugar and cinnamon in heavy large skillet over medium heat until melted.
  2. Add dark rum and liqueur and simmer until sauce thickens, stirring occasionally, about 5 minutes.
  3. Add bananas and stir to coat.
  4. Scoop ice cream into dishes.
  5. Spoon sauce and bananas over. Serve immediately

Cauliflower Soup with Pesto

Pesto

Ingredients
  • 3 Cups fresh packed basil leaves, (Spinach or Parsley)
  • 1 1/2 Tablespoon pine or walnuts
  • 2 1/2 Garlic Cloves
  • 3 Tablespoon butter-room temperature
  • 1/2 Cup olive oil
  • 1 Teaspoon salt
  • 4 Tablespoon grated parmesan cheese
  • 1/2 Freshly ground pepper
Directions
  1. Puree basil, pine nuts and garlic with the olive oil and salt in a blender.
  2. Transfer to bowl beat in cheese, butter and pepper

Soup

Ingredients
  • 4 Leeks, white part only, sliced
  • 1 Medium boiling politesse, peeled and thinly sliced
  • 2 Lg. cauliflower, separated in flouerettes
  • Cups chicken stock (preferably, home made)
  • Salt & freshly grated white pepper
Directions
  1. Combine vegetables and stock in large saucepan and bring to boil.
  2. Reduce heat and simmer until vegetables are tender.
  3. Cool slightly, puree in blender.
  4. Season with salt and pepper.

Note: Can be prepared two days ahead cool completely. and refrigerate. To serve re-heat soup. Ladle into bowls. Swirl 1 1/2 Tablespoon Pesto in each bowl in the center.

Raspberry Delight

Ingredients
  • 1 Cup vanilla wafer crumbs
  • 1/2 Cup butter
  • 1 Cups confectioners sugar
  • 3 Eggs
  • 1 1/2 Cup whipping cream
  • 1 Package frozen raspberries
  • 1/2 Cup chopped nuts
  • 1/2 Teaspoon vanilla
Directions
  1. Line a 11×7x1 1/2 inch pan with half crumbs, cream together butter, sugar and eggs one at a time beat after each addition.
  2. Spread over crumbs, whip cream until stiff, fold in raspberries, vanilla and nuts.
  3. Spread over cream mixture, top with remaining vanilla wafers. Chill and freeze over night.

Tip: We always sweeten the cream and add vanilla
