Vegan Recipes: Baked Beans and Mushroom Parcels

Ingredients
- 1 small onion, chopped
- 4 medium tomatoes, chopped
- 1 tbsp tomato puree
- ½ a small apple, chopped
- 1 tsp mixed herbs
- ½ tsp mustard powder
- 1 tin haricot beans, drained
- 1 tsp brown sugar
- 150ml water
Procedure
- Fry the onion in a splash of oil until soft.
- Add the tomatoes, the tomato puree, the apple and the water and reduce down by boiling for 5 minutes.
- Add the herbs and mustard powder, mix well and leave to cool for a few minutes.
- Whizz the mixture in a blender and then put it back in the pan along with the beans and cook on a low heat for 5 minutes.
- Add the sugar, stir well and serve.
Notes: Great with fresh, crusty bread.
Mushroom Parcels
This is quick and easy and goes well with piles of mashed potatoes. It makes 2 big portions for people with big appetites.
Ingredients
- 1 onion
- ½ red pepper
- 2 cloves garlic
- 8 mushrooms
- soya sauce
- pepper
- olive oil
- puff pastry
Procedure
- Dice the onion and fry in the olive oil until soft.
- Add the diced mushrooms and cook for approx 5 mins.
- Add the diced red pepper, crushed garlic, good dash soya sauce and ground pepper to taste, and cook for a further 5 mins.
- Roll out the puff pastry and cut into two 7 inch squares. Place half the mushroom filling in the middle of each square and fold into a parcel.
- Place on an oiled tray with the fold facing down and cook in a hot oven til brown (approx 10 to 15 mins).
