Homemade Baked Beans


  • 1 small onion, chopped
  • 4 medium tomatoes, chopped
  • 1 tbsp tomato puree
  • ½ a small apple, chopped
  • 1 tsp mixed herbs
  • ½ tsp mustard powder
  • 1 tin haricot beans, drained
  • 1 tsp brown sugar
  • 150ml water


  1. Fry the onion in a splash of oil until soft.
  2. Add the tomatoes, the tomato puree, the apple and the water and reduce down by boiling for 5 minutes.
  3. Add the herbs and mustard powder, mix well and leave to cool for a few minutes.
  4. Whizz the mixture in a blender and then put it back in the pan along with the beans and cook on a low heat for 5 minutes.
  5. Add the sugar, stir well and serve.

Notes: Great with fresh, crusty bread.

Mushroom Parcels

This is quick and easy and goes well with piles of mashed potatoes. It makes 2 big portions for people with big appetites.


  • 1 onion
  • ½ red pepper
  • 2 cloves garlic
  • 8 mushrooms
  • soya sauce
  • pepper
  • olive oil
  • puff pastry


  1. Dice the onion and fry in the olive oil until soft.
  2. Add the diced mushrooms and cook for approx 5 mins.
  3. Add the diced red pepper, crushed garlic, good dash soya sauce and ground pepper to taste, and cook for a further 5 mins.
  4. Roll out the puff pastry and cut into two 7 inch squares. Place half the mushroom filling in the middle of each square and fold into a parcel.
  5. Place on an oiled tray with the fold facing down and cook in a hot oven til brown (approx 10 to 15 mins).
